Flavor Profile
Winemaker William “Bill” Knuttel first earned recognition while working for two iconic California wineries: Saintsbury in the Napa Valley and Chalk Hill in Sonoma. Nowadays, he creates his own (equally delicious) wines, like this lush, fruit-forward Lost Isle Cabernet Sauvignon.
He crafted it with grapes grown at Wilson Vineyards—a site with which he’s worked closely for more than two decades, where fog and cool breezes roll in from the San Francisco Bay and help moderate the state’s hot, sun-baked conditions. And as usual, he chose to work with Cabernet Sauvignon from his favorite old vines, which produce grapes with exceptionally concentrated flavors. (Easy to see why previous vintages of this wine have impressed customers, judges and critics alike!)
Back at the winery, Bill aged the wine 14 months in fine French oak barrels and bottled without fining. The resulting wine bursts with expressive aromas of ripe plum and black cherry, melded with hints of baking spices. Its dark fruit flavors are accented beautifully on the palate, with velvety tannins and an appetizing freshness that makes this Cab endlessly versatile for pairing with your favorite grilled meats, vegetables and cheeses.
