The Sebastiani family have been making wine in California’s famed Sonoma region for almost 120 years. With this special Cabernet Sauvignon, the legendary Don Sebastiani is paying tribute to their Italian roots.
Don and his team crafted Profondita in the traditional ripasso style, a technique most commonly used in Italy’s Veneto region (aka, Amarone country), where the wine is ‘re-passed’ over dried grape skins. This process imparted beautifully dark color, seriously concentrated flavors and a velvety-smooth texture to the Cabernet. The resulting wine shows all the richness (and then some) of California’s exceptional 2019 vintage.
With its sumptuous blackberry and black currant flavors, Profondita will be delicious with juicy steak or meaty pastas. But fans of big, full-bodied reds will definitely want to save a glass to sip after dinner.
