When you think of American Cabernet Sauvignon, your mind likely goes straight to California. But Washington State also produces a host of impressive, great-value Cabs, especially when Mother Nature produces wines of “considerable elegance and purity,” as she did in 2017 (Jeb Dunnuck).
Case in point:
Riveted hails from the premium Columbia Valley, an iron-sturdy farming community, where the dry, sun-drenched landscape forces vines to bury their roots deep in search of nutrients. This process helped the Cab grapes develop seriously concentrated, black-fruit flavors – and, imparted Washington’s trademark dusty note to the finish.
For a really riveting food match, try smoked meats (beef or even turkey!) or a hearty Porterhouse for two.
