Although Franco is best known for his famous reds—like $100+ Fontodi Flaccianello—he also crafts beautiful whites. To help lock in vibrancy for this fine Verdicchio, for example, he treated the wine to “cold soaking,” keeping the “juice” cool before fermentation. The resulting white might remind you of Burgundy’s iconic Chablis.

Verdicchio dei Castelli di Jesi—one of the most famous and historic appellations in Italy’s Marche region—encompasses the hilly area around the town of Jesi. The dry maritime climate and calcareous soils help grapes develop complex, mineral-tinged flavors, which is perfect for making dry white wines. The best releases, like Solustro, come from the Classico subzone.

Vibrantly fresh, Solustro would be an ideal pairing for grilled seafood, roasted white meats or creamy vegetarian risottos. Or sip a well-chilled glass on its own or with soft, creamy cheeses.
