Here, vineyards stretch up to 2,600 feet above sea level, giving the fruit plenty of sunshine to ripen during the day, and cooler nights to maintain Assyrtiko's trademark acidity and freshness.

Back in the cellar, Christos ferments the juice in stainless steel to allow Assyrtiko to really shine. The resulting wine has aromas of fresh citrus, white peach and green pear, plus a subtle hint of Greek herbs.
