Don Sebastiani and his family are legends in California’s famed Sonoma region, but with this special Cabernet Sauvignon, they’re paying tribute to their Italian – not just their Golden State – roots.
The family crafted Profondita in the traditional ripasso style, a technique most commonly used in Amarone country, where the wine is ‘re-passed’ over dried grape skins. This process imparted beautifully dark color, seriously concentrated flavors, and a velvety-smooth texture to the Cabernet. The resulting wine shows all the richness (and then some) of California’s exceptional 2018 vintage, and will be delicious with juicy steak, meaty pasta, or enjoyed all on its own.
