Sofia turned to Tuscany’s historic governo method and allowed a portion of her ripe Sangiovese to air dry for 20 days—this dials the flavor concentration and complexity of the wine way, way up. Adding a dash of Merlot imparts a plummy smoothness, and time aging in oak barrels weaves inviting spice notes throughout.
Look for vibrant red fruits (think strawberry and cherry), plus creamy chocolate raisin and vanilla oak notes. One sip and you’ll see why Italian critic Luca Maroni often lavishes it with huge praise and high scores.
