Flavor Profile
The long-aged Selva del Moro Chianti Classico Riserva comes to us from the celebrated Casale dello Sparviero estate, a historic property that’s been the pride and joy of the Andrighetti family for three generations. Perfectly balanced with intense red fruit flavors and cocoa tones, its deliciousness is a testament to their sustainable farming methods and the winemaking talents of Franco and Matteo Bernabei.
Mother-son proprietors Ada and Arrigo began moving their production in an organic direction in the early 2000s, with a goal to achieve organic certification by the EU’s rigorous standards. That means a supreme commitment to the land as a whole; everything put to use, nothing wasted.
In the cellar, Franco and Matteo have consulted since 2018. They ensure all steps of the winemaking process also work in conjunction with nature and create a small range of high-quality Chianti bottlings.
This one is made with decades-old Sangiovese vines grown in sun-kissed, clay-based sandy soils. After a 15-day fermentation, the wine is transferred to French barriques and placed in the family’s early medieval farmhouse to rest for 18 long months. Once the wine is bottled, it’s aged several years more before release to earn the prestigious Chianti Classico Riserva classification.
By the time you pour it, the wine will be absolutely irresistible. Expect aromas of ripe berries and fresh jam, pepper and sweet tobacco, and a palate of intense cherry tones layered with red plum and nuanced by that aforementioned cocoa note.
